The wine has completed Malolactic conversion and has been stirred on its lees for a rich and creamy texture. The oak and acid further enhance the palate with length and texture giving a balanced and elegant wine.

Jake Bacchus, the winemaker, carefully chose a career in wine. Why wouldn’t he, with a name like “Bacchus”, the Greek God of wine! His career started in 2002 and Jake honed his craft by working at wineries in other countries like Italy, France and America.

The winemaking for this wine is very minimalistic and intervened with only when necessary giving these varieties the best chance to show their true potential. Get it right in the vineyard and the rest of the process is more custodial than manipulative.

The 2020 Bacchus Family Wine Chardonnay is a single vineyard wine from Margaret river. Hand picked, whole bunch basket pressed and fermented cool in french oak hogs heads with a selected yeast strain.

After 10 months in oak, no fining or stabilisation agents were added before it was cross flow filtered and bottled. This wine will maintain its quality in your cellar for a decade if you have the patience.
